smoked paprika flank steak

our family has been closer to a paleo lifestyle lately when it comes to nutrition. for a while we have been using this amazing meal planning software called E-meals – and it just so happens they have a Paleo meal plan that we were able to switch to that has been helping get us started. meals for a week and a shopping list sent to me once a week? done.
i’ve been really surprised at how flavorful and not boring everything has been so far (i mean, a life without bread or cheese? why?!) and i wanted to share my most favorite main course yet, a garlic rubbed flank steak.
the secret ingredient with this recipe is the smoked paprika. have you ever tried it? i was just made aware of it last year and have been waiting to find the perfect dish to highlight it in. enter this skirt steak. and the coconut oil adds this amazing flavor that almost makes the entire thing taste like candy. i’m serious. sweet butter candy.

INGREDIENTS
1lb skirt steak
1 tbsp coconut oil, melted
2 garlic cloves, minced
1 tbsp smoked paprika
1/2 tsp salt
1/2 tsp pepper

METHOD
1. mix coconut oil, garlic, salt, pepper & paprika in a small bowl
2. rub over entire flank steak – as it cools it will harden onto the meat like a crust
3. cook – there are a few ways you can do this:
     a. we grilled it. put the grill on high and let it get super hot before putting the steak on. grease grates and grill it for 4 minutes    per side (for medium well). let it rest for 10 before cutting against the grain.
     b. broil it. rub a broiler pan with oil and place steak on it. cook under broiler for 5 minutes per side (for medium well). let it rest for 10 minutes before cutting against the grain.
